As promised when I posted the base recipe for
Hearty Meat Sauce, here is the sloppy joe variation.
- 1 1/2 C. Hearty Meat Sauce
- 2 T. finely chopped green bell pepper
- 2 t. brown sugar
- 2 t. cider vinegar
- 1 t. Worcestershire sauce
Combine all ingredients in a saucepan; bring to a boil. Reduce heat, and simmer, uncovered for 20 minutes or until most of the liquid evaporates, stirring occasionally. Spoon meat mixture evenly on bottom halves of two sandwich rolls, then top with remaining halves of rolls. Serves 2 (7 WW points per servings if you use whole wheat rolls).
Normally I serve this with the best baked beans ever, however we had an abundance of produce that we needed to use so tomorrow I'll tell you about the Oven-Roasted Green Beans with Garlic and Bitty's Okra, Corn, and Tomato Stew.
