Okay, it is that time of year again . . . the time of year I can enjoy Brussels Sprouts without as much guilt as they are a winter vegetable. You can buy them year round, however I prefer to buy mine with a bit less of a carbon footprint so I make Aaron wait until they are a "product of the USA" before we purchase.
Many people wonder why we like Brussels Sprouts so much. I'm not sure what the answer is, considering my mother can't stand them and definitely never cooked them while I was growing up. My boss also thinks they are nasty and just accepts me as weird in my eating adventures. And I've had bad Brussels Sprouts - made them myself when I tried to roast thawed out frozen ones. But we really enjoy them and so I'm here to give you a "sorta/kinda" recipe.
Preheat your oven to 400 degrees F. Take your bag of Brussels Sprouts and cut off the stem. Then halve them. Toss them with olive oil, salt, pepper, and maybe a little garlic. Place on a large rimmed baking sheet. Place in oven and cook for 20 minutes, then toss/stir them around. Cook for another 10-15 minutes and remove from oven. Serve them up, nice and crunchy, and enjoy with whatever your main dish happens to be.
Monday night it happened to be a Buitoni Grilled Chicken & Spinach Cannelloni with Alfredo Sauce. Luckily we had a coupon and it was on sale because while it was tasty . . . it was not worth the price or the calories involved!
