I thought I'd share with you the yummies I had this past weekend, celebrating my birthday
(I think I gained five pounds!)
It all started Friday morning when my staff made me breakfast at work: egg casserole, biscuits and gravy, fresh fruit, little apple cakes, coffee, and orange juice. And I can't forget the beautiful tulips they gave me (which A. got the credit for).
Then there was Friday night, an early Valentine/Birthday meal: cornish game hens with cherry glaze, cranberry chutney, mashed sweet potaotes, bibb lettuce with yellow tomatoes & fresh mozzerella, plus don't forget the creme brulee.
SaturDAY was not too bad, however Saturday night was a different story: pot roast with balsamic onions, summer squash saute, rosemary roasted new potatoes, and for dessert strawberries with melted white chocolate.
After church on Sunday, three of us couples hit the Snappy Tomato lunch buffet. I know, horrible. But I do really like pizza. What can I say? Then Sunday night, my fellowship group got together and we had "build your own" taco salads with some tasty brownies and bar cookies for dessert.
Monday, my actual birthday, I had a home cooked breakfast by A. which included fried eggs just the way I like them, a picnic lunch with the ever so yummy mandarin orange chicken couscous (which at least is from a healthy cookbook!) and for dinner we made french dip sandwiches with the leftover pot roast, salads, and sweet potato fries.
I did also have yet another two birthday celebrations Thursday. At work we celebrated with the quarterly birthday cake and some friends took me to CPK for dinner as they know how much I love it.
Like I said . . . at least five
pounds!
