Week two of my personal challenge . . .
Sunday: Leftover paella sent home with us last night, yum!
Monday: Greek Chicken (from WW Shortcut Cookbook - 9780848726294) and Grilled Zucchini Salad with Lemon and Scallions (using up some leftover green onions from last week's meals) however we will make this with yellow summer squash from the farmer's market.
Tuesday: Chunky Beef Chili from the freezer, most likely with salad and more chile-corn muffins.
Wednesday: Polenta with roasted vegetables (from WW Five*Star Recipes - 9780848730031) . . . at least one meatless day this week.
Thursday: I have a work dinner to attend, Aaron will either hit a taco truck on the way home (oh how he loves those) or eat C.O.R.N. (clean out refrigerator night) for dinner.
Friday: Eat out somewhere . . .
Saturday: Family meal celebrating cranberries (because we like to do theme meals around a specific ingredient once a year)
