Back to last week: no Tuna Casserole on Thursday. I got a craving for breakfast so Aaron made a frittata cleaning out the refrigerator. It had red and green onion, sausage, and cheese. Yum! Then on Friday, at the graduation dinner, we had chicken dijon with lots of southern comfort side dishes. The blackberry basil salad dressing was phenomenal! And last night, after doing what felt like very little in the helping of a friend move, she fed us pizza. I love a good veggie pizza and this one was definitely a good one. So, on to this week.
Sunday: Tapas using up leftovers from yesterday's party (the appetizers we served were well received, I'll post them soon over on Two Happy Bellies).
Monday: Black Bean Burritos
Tuesday: Black Bean, Corn, and Avocado Quinoa to use up the rest of the black beans and avocado from last night's meal
Wednesday: Spaghetti with Pecorino Romano and modified Nuevo TX Waldorf Salad because it just sounds fabulous!
Thursday: Beef Stroganoff (I believe from Cooking Light, although I can't tell from my recipe printout and can't find this one on their website.)
Friday: Leftovers
Saturday: We're not sure, wait and see
