Back on December 3rd, I held my ninth annual cookie exchange. In addition to the standard cherry dots, I made molasses cookies using G.'s recipe (which is a good way to use up any sorghum in the house). My copy of the recipe includes this very important note: Cannot Double in Kitchen Aide!!
- 4 C. flour
- 1/2 t. salt
- 2 1/4 t. baking soda
- 2 t. ground ginger
- 1 1/4 t. ground cloves
- 1 1/4 t. ground cinnamon
- 1 stick butter
- 1/2 C. shortening
- 3 C. sugar
- 1/2 C. molasses (or sorghum)
- 2 large eggs
- Pearl Sugar
Preheat oven to 325 degrees F. Mix dry ingredients (flour, salt, baking soda, and spices) in a bowl. Cream together butter, shortening, and sugar. Add molasses and eggs. Slowly mix in dry ingredients.
Using a level cookie scoop, roll balls of dough and dip in pearl sugar.
Bake for 15 minutes then remove to a cooling rack.
And for those of you who've not seen pearl sugar, it does go by other names as well. The brand I found actually calls it hail sugar.
