We were supposed to go to a picnic and the weather did not cooperate with us. However, before we knew the weather would not cooperate . . . Aaron grilled some corn for a tasty salsa snack. It is a very easy recipe yet the flavors combined make it well worth eating.
2 ears corn, shucked and grilled until slightly charred
1 large tomato, chopped
1 can (15 oz.) black beans, rinsed and drained
2 T. red wine vinegar
1 t. olive oil
1/2 t. ground cumin
Cut corn off the cob, combine in a bowl with everything else, toss well. How hard can that be? It makes about 5 cups of salsa, perfect either for a picnic or for eating as a side salad to some grilled chicken or fish.
We ate the whole thing that night . . . tasty goodness. And I am definitely ready for him to grill me some more corn!
