Next was our entry that didn't quite fit any of the categories. We finally put it in dessert even though it wasn't very sweet. These apple brie pastry bites are simple to make and taste even better the next day. Sorry about the poor picture . . .
They came about after much experimentation from an idea developed after watching an episode of Spain on the Road Again ( a great PBS show we'll blog about later). We watched them make ensaimadas and started playing around with an apple/brie/honey version. However, as it involved multiple rises of a yeast dough and kitchen conditions get crowded during Octoberfest, we went with a less finicky route and used pastry shells. We also eliminated the honey after deciding it overpowered the brie. We still aren't completely satisfied with these and think they need more tweaking. That can wait a while though as we are a bit apple'd out after this weekend.
