I am sad to say I don't have a picture because Aaron decided to finish this off at lunch today . . . before I got home to take a picture tonight. I actually had planned for us to eat the leftovers of this for dinner. We had leftover chili instead. Anyway. While we were "snowed in" we cooked creatively instead of going to the store. We had meant to be out Saturday night but when we nixed the hockey game plan, we needed dinner. Rummaging through the pantry and refrigerator/freezer we found a can of premade pizza dough, a pound of ground beef, some cheddar cheese, and a can of diced tomatoes. We always have salsa in the house as well. I make a pizza casserole regularly, and we decided to adapt that into a taco pizza casserole. So we browned the ground beef with some fajita seasoning (courtesy of Penzey's of course!) and heated up the diced tomatoes with a cup of salsa thrown in for flavor. Next we mixed the seasoned beef into the flavored tomatoes. Then we rolled the dough out into a 9 by 13 pan. Put the beef mixture on top of the dough and cook at 425 degrees F. for about 15 minutes. Sprinkle shredded cheese across the top and put back into the oven until the cheese melts. We made a salad to go with and dinner was ready. Very tasty and I know my father will enjoy it! I was looking forward to eating it for dinner tonight . . . but instead I'll just have to make it again.
