We just have to say: "Wow!" This was one of the tastiest vegetarian meals we've ever eaten. Quinoa is one of those super grains that few non-vegetarians seem to have heard of, let alone eat. We enjoy it and have taken it to a whole new level.
- 1 C. Red Quinoa, cooked with 2 C. broth (vegetable broth if you're doing vegetarian)
- 15 oz. can black beans, drained and rinsed
- 2 C. roasted corn kernels
- 1 avocado, cut into 1/2 in pieces
- 1 pint grape tomatoes, halved
- 1/2 C. red onion, finely diced
- 3/4 C. Cilantro Salad Dressing (we couldn't find this, used extra cilantro with a Garlic salad dressing)
- 1/2 bunch cilantro, chopped
- 1/4 C. olive oil (we didn't use this, due to all the oil in the Garlic salad dressing)
- zest of 1 lime
- sea salt & pepper
Cook quinoa with broth according to directions on box (ours comes from Trader Joe's and has this recipe on the back). While quinoa is cooking, combine beans, corn, avocado, tomatoes, and onion. Top with salad dressing and toss gently. Add salt, pepper, and lime zest to taste. Add 1/2 the cilantro and gently toss once more. Set aside. When quinoa is cooked, toss with olive oil; add salt & pepper to taste. Set aside to cool.
When ready to serve, spread quinoa on a large serving platter and top with corn and bean mixture. Garnish with remaining cilantro. Serves 6 as a side dish. This 9 by 13 dish of food served 3 for dinner, with lunch for 2 the next day. We had it with pita bread and definitely did not walk away hungry. This one's a keeper!
In the back of the picture you can see pumpkin muffins I made as well. They went into the freezer for easy grab and go breakfasts . . .
