This is one of those throw together recipes - it has no instructions other than "combine to taste".
We had some pesto, fresh from the garden (yum!). We had some chicken that Aaron had grilled and cut into strips. And we had some rotini pasta in the house. I made 2 servings worth of pasta, then added the chicken and stirred in enough pesto to lightly coat the chicken and pasta. Tasted it, and decided mine needed nothing more. Aaron added a bit of salt and pepper to taste. Not only was dinner extremely tasty . . . the little bit of leftovers we ate at lunch the next day had us trying to decide when we should make it again.
Funny thing is, I didn't even know I *liked* pesto until this year when Aaron started making it to keep up with all the basil we planted. Now I am a true fan.
